full rich stout

It's my first stout brewing experience. I was a little nervous about just how bitter, on the bitter scale this might turn out to be. At first sample after fermenting before bottling, I have to admit - my tongue was hanging out, panting. I thought, I might have gone over the edge for the range of my taste palette. But I didn't want to toss out perfectly good beer either, so I started trolling online to find out if this would perhaps smooth with aging past the normal bottle carbonation period. The answer was yes. Some experienced brewers said - 6 weeks to 3 months, "less bitter because of all the hop/grain polyphenols have dropped out." So, I bottled and waited but I did caved in at 4 weeks. It turned into a very smooth full & rich deep stout. Thankfully - I didn't panic and toss it out because I had turned from beer wench to beer wimp crybaby for a few minutes. I'd say, this ended up with high marks. I like Guinness (Draught &Extra Stouts) - and Satchel's Irish Stout, did not disappoint. I will be buying this again come winter.
